Healthy July 4th Recipe Ideas

While grilling hamburgers and hot dogs is an American tradition, there are many delicious dishes that offer less calories, fat, and sodium. Try these three healthy recipes for a start to a happy and healthy Independence Day.

Red, White and Blue Salad

  • 6 cups washed spinach leaves
  • ½ cup blueberries
  • ½ cup strawberries
  • ½ cup gorgonzola cheese crumbles
  • ¼ red onion cut into rings

Mix all ingredients and serve with a raspberry vinaigrette dressing.

Steak and Herb Tacos

  • 1 ½ pounds lean boneless beef top sirloin steak
  • 2 tablespoons fresh marjoram or oregano
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • I tablespoon olive oil
  • 2 tomatoes, chopped
  • 1 small onion, chopped
  • ½  cup fresh cilantro
  • 8-10 oz. Monteray Jack cheese shredded
  • 12 corn tortillas

Combine spices and olive oil in a bowl; spread on both sides of beef. Refrigerate 2 to 4 hours. Grill steaks on a grill until desired tenderness. Cut beef crosswise in slices. On tortillas, layer beef, tomatoes, onion, cilantro, and cheese.

Patriotic Parfait

  • 2 cups raspberries
  • 2 cups pitted cherries, sliced
  • 2 cups blueberries
  • 2 teaspoons fresh lemon juice
  • 6 cups plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest

In a small bowl, mix together raspberries, cherries, and blueberries with 2 teaspoons of lemon juice and set aside. In another bowl, mix together yogurt, vanilla extract, and lemon zest. Use six small glasses to layer ½ cup fruit mixture, followed by ½ cup yogurt, ½ cup fruit, and another ½ cup yogurt.
